1. Store the bag at room temperature (64-72ยฐF / 18-22ยฐC) until fully colonized (substrate completely white)
2. Cut an X in the top surface of the bag once mycelium has covered the entire substrate
3. Mist with water 2-3 times daily and maintain high humidity (80-90%)
4. Move to a cool environment (50-59ยฐF / 10-15ยฐC) with indirect light to trigger fruiting
5. Harvest Enoki when caps are still small and tight โ maximum crunch guaranteed

๐ RECIPE โ STIR-FRIED ENOKI

Ingredients: 7oz fresh Enoki, 2 tbsp sesame oil, 2 cloves garlic minced, 1 tbsp soy sauce, chili flakes to taste.
Instructions:
1. Trim the base of Enoki clusters and gently separate the stems
2. Heat oil in a pan over medium-high heat and sautรฉ garlic for 30 seconds
3. Add Enoki and stir-fry 2-3 minutes until lightly golden
4. Deglaze with soy sauce, add chili flakes, and serve immediately
