Pioppino (Agrocybe aegerita) is one of the most prized gourmet mushrooms in Italian culinary tradition. It grows naturally on poplar and other hardwoods, produces meaty brown caps with crisp stems, and delivers a delicate nutty flavor.

π RECIPE β SAUTΓED PIOPPINI

Ingredients:
β’ 400 g fresh pioppini
β’ 3 tbsp extra-virgin olive oil
β’ 2 garlic cloves
β’ Fresh parsley, chopped
β’ Salt and pepper to taste
Instructions:
1. Clean pioppini with a damp cloth, trim the earthy stem base.
2. Heat oil in a wide skillet, add crushed garlic.
3. Add pioppini and cook over medium-high heat 8β10 minutes, stirring.
4. Season with salt, pepper, sprinkle with fresh parsley, and serve hot on crostini or as a side.

1. Break up the mycelium by gently shaking the jar.
2. Inoculate 100β200 g of spawn per kg of pasteurized substrate (hardwood sawdust, straw, supplemented pellets).
3. Mix thoroughly, bag, and seal with filter patch.
4. Incubate at 21β24 Β°C until fully colonized (10β18 days).
5. Trigger fruiting by lowering temperature to 13β18 Β°C and raising humidity to 90β95%.
Store sealed jar in the fridge (2β4 Β°C) for up to 8 weeks if not using immediately.
